Mother's are given a special status in Islam. We all know this. So every day, we should seek to please our mothers. Talk to her, visit her, take her somewhere, buy her something special, phone her, message her. We should ask her how she is and if she needs anything. Any attention we give to our mothers, she will gladly accept it.
As a mother, I know I love it when my children give me attention. So ask yourself, "What do I love to have from my children?" then go and give it to your mother. Don't wait once a year to do this. Your mother deserves more from you. Do it every day.
If circumstances make it not possible for you to do anything for your mother then the very least you could do is to make supplication to Allah for her every day. You can ask Allah for anything for your mother but one dua that I love most comes from the Qur'an (17:23-24):
And your Lord has decreed that you worship none but Him. And that you be dutiful to your parents. If one of them or both of them attain old age in your life, say not to them a word of disrespect, nor shout at them but address them in terms of honour.
And lower unto them the wing of submission and humility through mercy, and say: "My Lord! Bestow on them Your Mercy as they did bring me up when I was young."
The first part is a reminder, to myself firstly, and the second part is where the dua comes from. Learn the highlighted dua, if you haven't already. Read this dua every day for your mother (and father) and teach it to your children so they can make this dua for you, every day. As the saying goes, 'What goes around, comes around'. So if you do it for your mother then your children will do it for you. What a blessing that is.

رَّبِّ ارْحَمْهُمَا كَمَا رَبَّيَانِى صَغِيرًا
(Rabbir-ham-hu-maa ka-maa rabba-yaa-nii so-ghiiraa)
